Chia Pudding

I was pretty doubtful that this recipe would work when I made it this morning!!! But it came out better than I expected, it’s delicious!

What you need.

4 tablespoons almond butter (I made my own, directions are located in the previous post, otherwise you can buy 100% almond butter from health food stores).
8 tablespoons coconut milk
blend until a creamy texture is formed, add more butter/milk as needed to get the texture

1/4 cup chia seeds
2 tablespoons raw honey
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons goji berries
2 tablespoons frozen blueberries
(I only made a small bowl of it up this morning to see if it worked, increase ingredients if you want a bigger portion).

Mix together & place in fridge
When chia pudding has thickened which will take at least 30 mins, the longer the better, add extra fruit if desired.
This recipe might need a bit of playing with, if you follow my directs & don’t like it, then just keep adding ingredients until you get it the way you like it.
You can add and remove as much as you like, if the mixture has not thickened up, add more chia seeds, they will expand to double their size when they absorb the fluid, or add more milk if the mixture is not creamy enough.
